From a heritage breed bacon flight to lamb bolognese to build-your-own manhattan’s, Stapleton’s family owned scratch kitchen, The Berkshire, has it all. Serving up inventive American cuisine to the Denver area since 2007, this restaurant has found a unique (and tasty) niche in pig-centric dishes. Here in pork heaven, you’ll find pig wings, bacon wrapped bacon, pork patty burgers and a smattering of beef, chicken, fish and even vegetarian entrees!
Andy Ganick’s road trip from Florida to Boston fueled up the idea to open a “bacon restaurant”. And so, the Berkshire was born. At the time it was a crazy idea, but by 2007 it was a thriving business. After working for several years in the restaurant industry, Ganick made his bacon restaurant dream a reality. He used his experience and creativity to head a project so unique that it couldn’t not be successful.
General Manager Susan Wieser joined the team in ’07 as a waitress. She climbed the ranks, proving herself with an amazing bacon sticky toffee pudding recipe and hard-working attitude. She is now Andy’s “right-hand man”, and the two continue to dominate the pig restaurant market.
What makes this pig-tastic restaurant special?
Hint:
It has to do with more than the creative pork dishes.
Answer:
It’s the variety that makes this place so unique. The Berkshire boasts brunch-time crowdpleasers, classic lunch favorites, and desserts sure to please even the sweetest tooth (and yes, even the dessert has bacon). Delectable dishes aside, The Berkshire is especially proud of their cocktail offerings. Their signature drinks are some of the most unique we’ve seen, and their stellar mule list is just the beginning.
Keep it classy with the Berk’ Old Fashioned, a drink crafted with barrel aged Silver Coyote white whiskey, black walnut bitters, orange peel, an amarena cherry, and one large ice cube. Or have some fun with a jalapeño margarita! Their extensive drinks list leaves nothing to be desired. Even the pickiest of cocktail aficionados are sure to find something to delight their palettes.
Craving a mean pork slider, or a new spot to brunch with the girls? Whatever you’re in search of, The Berkshire has something for everyone. There’s just one requirement for patrons: Must Love Pigs.
